Ingredients
7 ounces package Miracle Noodle Ready-In Minutes
6-7 tablespoons butter
1 Shallot, finely chopped
2 Garlic cloves, finely chopped
1 Tablespoon flat leaf parsley, finely chopped
1 Teaspoon fennel seeds, toasted and crushed
½ Crushed red pepper flakes
Salt and Pepper to taste
1 Tablespoon brandy
7.75 Ounce can escargots, drained
Black Truffle Cheese, grated
Instructions
Preheat the oven to 400 degrees Fahrenheit.
Rinse and dry roast Miracle Noodle, then keep warm.
Combine butter, shallot, garlic, parsley, fennel, red pepper, salt, pepper, and brandy in a blender.
Arrange escargot in a single layer on an ovenproof pan, cover with the butter mixture, and cook until the snail butter is bubbling hot.
Toss some of the hot butter with the warm Angel Hair.
Serve by placing the angel hair on a serving dish, topping it with the remaining snail butter and truffle cheese, and serve immediately.
Coconut Curry Angel Hair Soup
This delectable dish is the creation of Henry Godlewski, the winner of our Facebook Recipe Contest. Combining bell peppers, curry, coconut milk, and a blend of flavorful spices like turmeric, this meal is a delightful fusion of vibrant flavors. Using our Angel Hair noodles elevates this dish to a satisfying and delicious bowl that promises a culinary experience that is both flavorful and fulfilling.
Ingredients
1 7 Oz Package Miracle Noodle Angel Hair
1 Medium onion
1 Medium shallot
2 Stalks celery
1 Small orange or red bell pepper
1 Clove garlic
1 Medium carrot
4 Tbsp Extra virgin olive oil
1 Quart/32 oz organic chicken or vegetable stock
1 13 Oz Can Unsweetened coconut milk
1 tsp Curry powder
1/2 tsp Turmeric powder
1 tsp Ginger powder
8 Fresh, sweet basil or Thai basil leaves
3 Whole bay leaves
Fresh ground black pepper, & potassium salt to taste
2 Packets stevia
1 Tbsp. Coconut flour, tapioca flour, or any flour of choice mixed in with 1/2 Cup of water for thickening
Instructions
Heat olive oil in a heavy-bottomed soup pot over medium-high heat, then sauté the onion, celery, and shallot until lightly browned or translucent.
Add garlic and basil to the sautéed vegetables and cook for 1 minute.
Pour in chicken or vegetable stock.
Stir in bay leaves, black pepper, salt, curry, turmeric, and ginger, then simmer for 7-10 minutes.
Mix in grated carrot.
Incorporate coconut milk, stevia, and a mixture of flour and water to thicken the soup.
Simmer for an additional 5 minutes.
Add noodles to the soup and simmer for 3 more minutes.
Serve the soup garnished with a sprig of basil.
Creamy Taco Spaghetti Bake
Another day, another delightful taco meat creation as I work through my leftovers. This dish was absolutely fantastic - a true standout! Farewell to taco salad; I won't be going back to that anytime soon! This flavorful and comforting meal was so delicious that I could easily enjoy it every day.
Ingredients
1 bag of Organic Miracle Noodle Spaghetti or Angel Hair
Just under 1 oz cream cheese, softened
1.5 Tablespoons sour cream
1.5 Tablespoons taco sauce (I use the two bell brand, 0 carbs)
Salt, Pepper, Onion powder - all to taste
2 oz of cooked taco meat
2 tablespoons smooth salsa
1 - 1.5 oz shredded cheddar
Jarred or Fresh Jalapeno slices (optional)
Instructions
Rinse and dry-fry Miracle Noodle until excess moisture evaporates, then spread it out in a small baking dish.
Combine softened cream cheese, sour cream, taco sauce, and spices, adjusting salt to taste due to the plainness of the noodles.
Spread the mixture evenly over the noodles.
Layer with meat, salsa, cheese, and optional jalapenos. Bake at 350 degrees for approximately 20 minutes, then finish under the broiler.
*Note: Macros will depend on the ingredients you use. I used 70 grams of 80% ground beef, the salsa pictured, taco bell taco sauce, 35g Tillamook cheddar, then .85oz Philly brand cream cheese and Daisy sour cream. My dish came to 455 calories, 4g NC, 37g fat, 23g protein.
Garlic Vegan Miracle Noodle Fettuccini

Ingredients
Roasted tomatoes and broccoli
2 packages of Miracle Fettuccini
1 bunch of broccoli
2 vine ripe tomatoes
Light olive oil
Simply Beyond Garlic Herb Spray
Salt and pepper
Instructions
Cut the broccoli into florets and arrange them on a heavily oiled jelly roll pan.
Generously spray the florets with garlic spray and roast for approximately 20 minutes or until they develop a slight browning.
While the broccoli is roasting, halve the tomatoes and remove most of the flesh.
Once the broccoli is done, set it aside and place the tomatoes face up on a sheet pan, reducing the temperature to 375°F.
Spray the tomatoes generously with garlic spray, sprinkle with salt, and roast for about an hour until they caramelize; if needed, turn them over and roast for an additional 15 minutes. Once done, cut them into bite-sized pieces.
While the tomatoes are roasting, rinse and drain the noodles. Cook them in a wide-bottomed pan over medium heat for about 20 minutes until all liquid evaporates and the noodles start to stick; reduce heat to low, spray with garlic spray, and toss to coat once they begin sticking.
Adjust the amount of spray to taste, then add the roasted tomatoes with their juices, toss, incorporate the broccoli, season with salt and pepper to taste, and adjust seasoning as needed with more garlic spray if desired.
Miracle Fettuccini Shrimp Stir-Fry
Shirataki noodles are traditional Japanese noodles made from fiber pulled from the bulb of a Japanese root vegetable. Thus, they are mostly water and soluble fiber making these noodles zero-carb!!! Ingredients
1 package Miracle Noodle Fettuccini
1 lb raw shrimp
2 cups broccoli florets
1 cup sugar snap peas
1/2 cup diced carrots
1 cup diced mushrooms
3 tablespoons avocado oil
2 tablespoons soy sauce
1 tablespoon white wine
1 tablespoon rice wine vinegar
1/2 cup chicken broth
Green onion for garnish
Instructions
Begin by rinsing the miracle noodles in water and then pat them dry.
Heat a frying pan over medium heat, add the noodles, and cook for 7 minutes. Set aside.
In another pan, heat one tablespoon of oil and sauté carrots and broccoli for about five minutes.
Combine soy sauce, wine, vinegar, and broth in a bowl and whisk together.
Pour half of the sauce over the carrots and broccoli, then add the remaining oil.
Add mushrooms and sugar snap peas to the pan, pour the rest of the sauce over them, and cook for an additional five minutes.
Introduce shrimp and green onions to the vegetables.
Serve the stir-fry over Miracle Noodle Fettuccini for a delicious meal.
